Spinach and Feta Spicy Omelette

This recipe uses Ras al Hanout, one of my most favourite ever mixtures of spices. Find a good quality mix (I like the one from Arabica Food & Spice Co.). I like to add heat to almost all my food, but the Chilli can be omitted from this recipe.

Preparation Time: 10 mins
Cooking Time: 10 mins
Serves: 1-2

Ingredients:
3 Spring Onions
1 Garlic Clove
1/2 teaspoon Ras al Hanout
1 Red Chilli
1 handful of Fresh Spinach
1/2 handful of Fresh Coriander
30g Crumbly Feta Cheese
3 Eggs
Olive Oil

Instructions:
- In a bowl, mix the spinach, coriander, feta cheese and Ras al Hanout.
- In a separate bowl, mix the eggs lightly, only until white and yolk are combined.
- Heat oil in a pan and fry the onions, garlic and chili lightly.
- Pour the eggs in the pan and place spinach mixture on top. Put on medium heat and cover the pan for 5 minutes.
- Carefully turn flip over the omelette and cook, covered for another 5 minutes or until the omelette is cooked fully through.

Roast Lemon Chicken with Sautéed Spinach

It's been a really long time since I last updated this blog. Typical. I made some Chicken last night which got masses of praise from my lover and his dad. I thought it was worthy of a new post!

Preparation Time: 5 mins
Cooking Time: 1.5-2 hours
Serves: 2-4

Ingredients for the Roast Lemon Chicken:
1 Whole Chicken
4 Lemons, halved
2 Tablespoons Garlic Powder
1 Tablespoon Dried Oregano
Salt
Pepper
Olive Oil

Ingredients for Sautéed Spinach:
1 Bag of washed & ready to eat Spinach
6 Garlic Cloves,  grated finely
Salt
Pepper
Lemon
Olive Oil

Instructions for the Roast Lemon Chicken:

- Preheat the oven to 204 degrees/ Gas mark 6.
- Wash the chicken well inside and out. Pat dry with kitchen towel. 
- Place in a roasting pan. Squeeze the juices of the lemon all over the chicken and stuff the squeezed lemon inside the chicken.
- Put olive oil inside the skin of the chicken. This should keep it moist.
- Sprinkle the garlic powder all over the chicken, coating well. Repeat with the dried oregano.
- Salt and pepper the chicken liberally.
- Place in the middle of the oven and cook for 1.5 hours or until chicken is cooked in full.
- When chicken is cooked, take out the oven and leave to rest for 15 minutes before serving.

Instructions for the Sautéed Spinach:

- Heat a deep saucepan with olive oil.
- Cook the garlic for 1 minute, be careful not brown.
- Put the spinach in the pan and stir vigorously for 5-6 minutes.
- Season to taste with salt, pepper and lemon.

Notes:

To take the taste to the next level, replace the olive oil with a big fat blob of butter!
